Ingredients:

Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Filling:

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/4 cup chopped fresh parsley

Sauce:

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions:

  1. Prepare Chicken:
    • Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and Italian seasoning.
    • Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
  2. Prepare Filling:
    • In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are tender and browned.
    • Stir in the chopped parsley and cook for another minute. Remove from heat and let it cool slightly.
  3. Stuff Chicken:
    • Stuff each chicken breast with the sautéed mushroom mixture and sprinkle mozzarella and Parmesan cheese inside each pocket.
    • Secure the chicken breasts with toothpicks if necessary to keep the filling inside.
  4. Cook Chicken:
    • In the same skillet, add a little more olive oil if needed. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
    • Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
  5. Prepare Sauce:
    • While the chicken is baking, make the sauce. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
    • Pour in the chicken broth and heavy cream. Stir in the Italian seasoning, salt, and pepper. Let the sauce simmer for about 5 minutes until it thickens slightly.
  6. Serve:
    • Remove the chicken from the oven and let it rest for a few minutes. Serve the stuffed chicken with the garlic butter sauce drizzled on top.
