Fast Easy Pasta Salad

Preparation Time:

Ingredients:

  • 12 oz. rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup Parmesan cheese, grated

For the Dressing:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the rotini pasta and cook according to package instructions until al dente.
    • Drain the pasta and rinse with cold water to cool. Set aside.
  2. Prepare the Vegetables:
    • While the pasta is cooking, prepare the cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.
    • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella balls, and fresh basil.
  3. Make the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.
  4. Combine and Serve:
    • Pour the dressing over the pasta salad and toss until everything is well coated.
    • Sprinkle the grated Parmesan cheese on top.
    • Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
