Fast Easy Pasta Salad

Ingredients:
- 12 oz. rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1 cup mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil, chopped
- 1/4 cup Parmesan cheese, grated
For the Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the rotini pasta and cook according to package instructions until al dente.
- Drain the pasta and rinse with cold water to cool. Set aside.
- Prepare the Vegetables:
- While the pasta is cooking, prepare the cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella balls, and fresh basil.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.
- Combine and Serve:
- Pour the dressing over the pasta salad and toss until everything is well coated.
- Sprinkle the grated Parmesan cheese on top.
- Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
