Chicken Cabbage and Bacon soup

Ingredients:

  • 2 tablespoons olive oil (or butter)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 slices of bacon, chopped
  • 2 boneless, skinless chicken breasts (or thighs), diced
  • 1 small head of cabbage, chopped (or about 4 cups)
  • 4 cups chicken broth
  • 1 medium potato, diced (optional for extra heartiness)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional for a smoky flavor)
  • Salt and pepper to taste
  • 1 cup heavy cream or half-and-half (optional, for a creamy soup)
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Cook the Bacon:
    • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.
    • Remove the bacon and set it aside on a paper towel-lined plate to drain.
  2. Cook the Chicken:
    • In the same pot, add the diced chicken (you may need to add a little more oil). Season the chicken with salt, pepper, and smoked paprika.
    • Cook the chicken until browned and cooked through, about 6-7 minutes. Remove the chicken and set it aside with the bacon.
  3. Sauté the Vegetables:
    • Add the diced onion and minced garlic to the same pot. Sauté for about 2-3 minutes until the onion softens.
    • If you like a little extra depth of flavor, you can add a bit more oil or bacon fat here.
  4. Add the Cabbage and Broth:
    • Add the chopped cabbage to the pot and stir to combine with the onion and garlic.
    • Pour in the chicken broth and bring the soup to a simmer. Add the diced potatoes if using. Cook the soup for 10-15 minutes, until the cabbage is tender and the potatoes (if added) are cooked through.
  5. Combine the Chicken, Bacon, and Cream:
    • Return the cooked chicken and bacon to the pot. Stir everything together.
    • For a creamy version, add the heavy cream or half-and-half. Stir to combine and simmer for another 5 minutes.
  6. Season to Taste:
    • Taste the soup and adjust the seasoning with more salt, pepper, or thyme if needed.
  7. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley, if desired.
    • Serve hot with crusty bread or crackers for extra comfort.

Optional Add-Ins:

  • A sprinkle of grated cheese on top (Parmesan or cheddar) for extra flavor.
  • A squeeze of lemon juice to add brightness.
  • A dash of hot sauce or red pepper flakes for a little heat.
