Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, finely chopped
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare Chicken: Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side until golden brown. Transfer the chicken to a plate and let it cool slightly.
  3. Prepare Filling: In the same skillet, melt the butter over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes. Add the mushrooms and thyme and cook until the mushrooms are tender and the liquid has evaporated, about 5 minutes. Stir in the chicken broth and heavy cream, and cook until the mixture is thickened, about 5-7 minutes. Remove from heat and let it cool slightly.
  4. Roll Out Puff Pastry: On a lightly floured surface, roll out the puff pastry into a large rectangle, about 1/8 inch thick. Cut the pastry into 4 equal squares.
  5. Assemble Wellingtons: Spread 1 tablespoon of Dijon mustard onto each piece of puff pastry. Place a chicken breast on top of the mustard. Spoon the mushroom mixture over the chicken breasts. Fold the corners of the puff pastry over the chicken, sealing the edges with beaten egg to create a tight package.
  6. Brush with Egg Wash: Place the wrapped chicken breasts seam-side down on the prepared baking sheet. Brush the tops with the remaining beaten egg.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and the chicken is cooked through.
  8. Serve: Let the Chicken Wellingtons cool for a few minutes before serving. They can be served as is or with a side of your choice.
