Chinese-Style Beef and Onion Stir-Fry

Ingredients:

  • 1 lb beef (flank steak or sirloin), thinly sliced against the grain
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated or minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional, for extra umami)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil (for stir-frying)
  • 1 teaspoon sugar (optional, to balance flavors)
  • ¼ cup water or beef broth (for sauce)
  • 1-2 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 tablespoon rice vinegar (optional, for a touch of acidity)
  • 2 green onions (scallions), chopped for garnish
  • Red pepper flakes or chili paste (optional, for heat)
  • Salt and pepper to taste

Instructions:

  1. Marinate the Beef:
    • In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 tablespoon hoisin sauce, and 1 teaspoon sesame oil. Add a pinch of pepper and let it marinate for about 15-30 minutes to absorb the flavors.
  2. Prepare the Stir-Fry Sauce:
    • In a small bowl, mix together the remaining soy sauce, oyster sauce (if using), sugar, and water (or beef broth). Stir in the cornstarch-water mixture and set aside. This will help thicken the sauce as it cooks.
  3. Stir-Fry the Beef:
    • Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated beef to the hot pan in a single layer. Let it sear for 1-2 minutes without stirring, then toss and stir-fry for another 2-3 minutes until the beef is browned but still tender. Remove the beef from the skillet and set it aside.
  4. Cook the Onions:
    • In the same skillet, add a little more oil if needed. Add the sliced onions and cook for 2-3 minutes, stirring occasionally, until they soften and start to caramelize slightly.
  5. Add Garlic and Ginger:
    • Add the minced garlic and grated ginger to the onions. Stir-fry for about 1 minute until fragrant.
  6. Combine Everything:
    • Return the cooked beef to the skillet with the onions, garlic, and ginger.
    • Pour the stir-fry sauce mixture over the beef and onions, stirring to coat everything evenly. Let it simmer for 1-2 minutes to thicken and allow the flavors to meld together.
  7. Garnish and Serve:
    • Once the sauce has thickened and everything is well coated, remove from heat. Garnish with chopped green onions and optional red pepper flakes for extra heat.
    • Serve the stir-fry with steamed rice or noodles.
