Ingredients:

For the Pastry (Pâte à Choux):

  • 1/2 cup unsalted butter
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

For the Cream Filling:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Pastry:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • In a medium saucepan, combine the butter, water, and salt. Bring to a boil over medium heat.
    • Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
    • Remove the pan from heat and let the mixture cool for 5 minutes.
    • Add the eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
    • Transfer the dough to a piping bag fitted with a large round tip (or use a spoon) and pipe mounds onto the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 20-25 minutes, or until the puffs are golden brown and puffed.
    • Turn off the oven, open the oven door slightly, and let the puffs cool in the oven for 10 minutes. Transfer to a wire rack to cool completely.
  2. Prepare the Cream Filling:
    • In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Transfer the whipped cream to a piping bag fitted with a small round tip.
  3. Assemble the Cream Puffs:
    • Once the puffs are completely cooled, use a small knife to cut a small slit in the side of each puff.
    • Pipe the whipped cream filling into each puff through the slit until filled.
  4. Serve:
    • Dust the filled cream puffs with powdered sugar before serving if desired.
