Ingredients:

  • 1 cup pineapple juice (preferably fresh)
  • 1/2 cup crushed pineapple (canned or fresh)
  • 1/2 cup sweet chili sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/4 teaspoon red pepper flakes (optional, for extra heat)

Instructions:

  1. Combine Ingredients:
    • In a medium saucepan, combine the pineapple juice, crushed pineapple, sweet chili sauce, rice vinegar, soy sauce, brown sugar, minced garlic, and minced ginger. Stir well to combine.
  2. Cook Sauce:
    • Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 5 minutes, stirring occasionally.
  3. Thicken Sauce:
    • In a small bowl, whisk together the cornstarch and water to create a slurry. Slowly add the slurry to the simmering sauce, stirring constantly.
    • Continue to cook the sauce for an additional 5-7 minutes, or until it has thickened to your desired consistency.
  4. Add Heat (Optional):
    • If you prefer a spicier sauce, stir in the red pepper flakes and cook for another minute.
  5. Serve:
    • Remove the sauce from the heat and let it cool slightly before serving. The sauce can be served warm or chilled, and pairs well with grilled chicken, shrimp, or as a dipping sauce for appetizers.
