GARLIC BUTTER SEAFOOD BOIL

Ingredients:

Seafood Boil:

  • 1 lb large shrimp, deveined and shell-on
  • 1 lb snow crab legs
  • 1 lb clams, cleaned
  • 1 lb mussels, cleaned
  • 1 lb small red potatoes
  • 4 ears of corn, cut into thirds
  • 1 smoked sausage, sliced
  • 1 lemon, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Garlic Butter Sauce:

  • 1 cup unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare Seafood and Vegetables:
    • Rinse the seafood thoroughly and set aside.
    • In a large pot, bring water to a boil. Add the red potatoes and cook for 10 minutes.
    • Add the corn and smoked sausage to the pot and cook for another 5 minutes.
  2. Cook Seafood:
    • Add the shrimp, crab legs, clams, and mussels to the pot. Add the Old Bay seasoning, paprika, cayenne pepper (if using), and salt and pepper.
    • Squeeze the lemon quarters over the pot and add the garlic. Stir everything together and cook for 5-7 minutes, or until the seafood is cooked and the clams and mussels have opened. Discard any that do not open.
  3. Prepare Garlic Butter Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the minced garlic and cook until fragrant, about 2-3 minutes.
    • Stir in the lemon juice, chopped parsley, and salt and pepper. Remove from heat.
  4. Combine and Serve:
    • Drain the seafood and vegetables from the pot and transfer them to a large serving platter.
    • Pour the garlic butter sauce over the seafood boil and toss to coat evenly.
    • Serve immediately with extra lemon wedges and crusty bread, if desired.
