Grape Rosemary Flatbread 🍇🌿

This Grape Rosemary Flatbread is a delightful combination of savory and sweet. The sweetness of fresh grapes is perfectly balanced with the earthy flavor of rosemary, all on a soft, crispy flatbread base. It’s a perfect appetizer, snack, or side dish for any occasion!


Ingredients:

For the Flatbread Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 tablespoon active dry yeast
  • ¾ cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 1 teaspoon salt

For the Topping:

  • 1 cup fresh grapes, halved (you can use red, green, or black grapes)
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons olive oil (for drizzling)
  • 1 tablespoon honey (optional, for sweetness)
  • Sea salt, for sprinkling

Instructions:

  1. Prepare the Dough:

    • In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
    • In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil, and stir until a dough forms.
    • Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
    • Place the dough in a greased bowl, cover with a clean cloth, and let it rise for about 1 hour or until it doubles in size.
  2. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). If you have a pizza stone, place it in the oven while preheating for a crispy crust.
  3. Shape the Flatbread:

    • Punch down the dough and divide it into two portions for two smaller flatbreads or keep it whole for one large flatbread.
    • Roll the dough out into a thin oval or rectangle on a lightly floured surface. If you’re using a pizza stone, transfer the shaped dough onto a piece of parchment paper for easy transfer to the stone.
  4. Top the Flatbread:

    • Drizzle olive oil over the dough and spread it evenly.
    • Evenly distribute the grapes, chopped rosemary, and a pinch of sea salt on top of the dough.
    • Optionally, drizzle honey over the grapes for a sweet touch that complements the rosemary.
  5. Bake:

    • Bake the flatbread in the preheated oven for 12-15 minutes or until the edges are golden and crispy and the grapes have softened.
    • If you’re using a pizza stone, the flatbread will bake quicker, so keep an eye on it after 10 minutes.
  6. Serve:

    • Once baked, remove from the oven and let cool for a few minutes.
    • Slice the flatbread into pieces and serve warm. You can drizzle more olive oil or honey before serving if desired.

  • Grapes: If fresh grapes are out of season, you can use raisins or dried grapes as a substitute. However, fresh grapes offer a juicier, more vibrant flavor.
  • Herb Variation: Try mixing in a little thyme or oregano along with the rosemary for a deeper herb profile.
  • Make It Vegan: This recipe is already vegan, but you can add some vegan cheese for an extra creamy texture.
