For the Dough:

1 tsp baking powder

1 cup cold unsalted butter, cubed

For the Apple Filling:

4–5 tart apples (Granny Smith or Gala), peeled & thinly sliced

½ cup granulated sugar (adjust to taste)

1 tbsp lemon juice

1 tsp ground cinnamon

½ tsp vanilla extract

2 tbsp breadcrumbs or crushed walnuts (to absorb juice)
For Topping:

Egg white (for brushing)

1. Make the Dough

In a food processor, pulse flour, sugar, salt, and baking powder.

Add cold butter and pulse until crumbly.

Mix in egg yolk and water, 1 tbsp at a time, until dough forms.

Divide into 2 discs (one slightly larger for the bottom crust). Chill 30 mins.
2. Prepare the Filling

Toss apples with sugar, lemon juice, cinnamon, and vanilla. Let sit 10 mins.

Drain excess liquid, then mix in breadcrumbs/walnuts.
3. Assemble the Pie

Roll the larger dough disc to fit a 9×13-inch pan (or round tart tin).
