Hungarian Apple Pie (Almás Pite) 🍏🍂

A beloved Hungarian dessert, Almás Pite features a flaky, buttery crust layered with spiced apple filling—less sweet than American pie, with a delicate crumb topping. Perfect with tea or coffee!

📝 Ingredients

For the Dough:

  • 2½ cups all-purpose flour

  • ½ cup granulated sugar

  • ½ tsp salt

  • 1 tsp baking powder

  • 1 cup cold unsalted butter, cubed

  • 1 egg yolk (save egg white for brushing)

  • 2–3 tbsp cold water or milk (as needed)

For the Apple Filling:

  • 4–5 tart apples (Granny Smith or Gala), peeled & thinly sliced

  • ½ cup granulated sugar (adjust to taste)

  • 1 tbsp lemon juice

  • 1 tsp ground cinnamon

  • ½ tsp vanilla extract

  • 2 tbsp breadcrumbs or crushed walnuts (to absorb juice)

For Topping:

  • Egg white (for brushing)

  • Powdered sugar (for dusting)

👩‍🍳 Instructions

1. Make the Dough

  1. In a food processor, pulse flour, sugar, salt, and baking powder.

  2. Add cold butter and pulse until crumbly.

  3. Mix in egg yolk and water, 1 tbsp at a time, until dough forms.

  4. Divide into 2 discs (one slightly larger for the bottom crust). Chill 30 mins.

2. Prepare the Filling

  • Toss apples with sugar, lemon juice, cinnamon, and vanilla. Let sit 10 mins.

  • Drain excess liquid, then mix in breadcrumbs/walnuts.

3. Assemble the Pie

  1. Roll the larger dough disc to fit a 9×13-inch pan (or round tart tin).

  2. Spread filling evenly over the dough.

  3. Roll the smaller disc and cut into strips for a lattice top (or leave whole and cut vents).

  4. Brush with egg white for shine.

4. Bake

  • Bake at 350°F (175°C) for 35–40 mins until golden.

  • Cool slightly, then dust with powdered sugar.

✨ Tips & Variations

  • Extra flaky crust: Use half butter, half lard.

  • Raisins or rum? Soak ¼ cup raisins in rum and add to filling.

  • Serve warm with a dollop of whipped cream or vanilla ice cream.

This comforting, lightly spiced pie is a Hungarian classic—ideal for autumn! 🍎
