Ingredients

  • 1 lb breakfast sausage (or turkey sausage for a lighter option)

  • 6 large eggs

  • ½ cup shredded cheddar cheese (or pepper jack for a kick)

  • ¼ cup milk (or heavy cream for extra richness)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 4 large flour tortillas (burrito-size, 10-inch)

  • 1 tbsp butter (for scrambling eggs)

  • Optional add-ins:

    • Diced bell peppers

    • Chopped spinach

    • Hot sauce or salsa


Instructions

1. Cook the Sausage

  • In a skillet over medium heat, cook the sausage until browned and crumbled (about 5-7 minutes). Drain excess grease.

2. Scramble the Eggs

  • In a bowl, whisk eggs, milk, salt, and pepper.

  • Melt butter in the same skillet, then pour in the egg mixture.

  • Cook, stirring gently, until soft and fluffy (about 3-4 minutes).

  • Remove from heat and mix in cheese (it should melt slightly).

3. Assemble the Roll-Ups

  • Warm tortillas (microwave for 10-15 sec or heat in a dry skillet) for flexibility.

  • Divide sausage and eggs evenly among tortillas, spreading in a line slightly off-center.

  • Fold sides inward, then roll tightly from the bottom up (like a burrito).

4. Optional Crispy Finish

  • Heat a lightly oiled skillet over medium heat.

  • Place roll-ups seam-side down and cook for 1-2 minutes per side until golden and crisp.


Serving & Storage
