Túró Rudi (Hungarian Cottage Cheese Chocolate Bar)
A nostalgic Hungarian treat featuring sweetened cottage cheese (túró) wrapped in smooth chocolate!
This homemade version captures the creamy, slightly tangy filling and crisp chocolate shell of the classic store-bought snack.
Ingredients
For the Filling:
-
2 cups (500g) dry cottage cheese (túró) or farmer’s cheese (see note below)
-
½ cup powdered sugar (or to taste)
-
1 tsp vanilla extract
-
1 tbsp sour cream or heavy cream (optional, for creaminess)
-
Pinch of salt
For the Chocolate Coating:
-
7 oz (200g) dark or milk chocolate, chopped
-
1 tbsp coconut oil (for shine and snap)
Optional Add-Ins:
-
Grated lemon zest
-
Raisins or crushed biscuits (for texture)
Instructions
1️⃣ Prepare the Filling
-
Blend the túró: In a food processor, blend the cottage cheese until smooth (or press through a sieve for a silky texture).
-
Sweeten: Mix in powdered sugar, vanilla, sour cream (if using), and salt. Taste and adjust sweetness.
-
Shape: Roll the mixture into 4–6 thick logs (about 1-inch thick). Place on parchment paper and freeze for 30 minutes to firm up.
2️⃣ Coat with Chocolate
-
Melt chocolate and coconut oil in a double boiler (or microwave in 20-sec bursts), stirring until smooth.
-
Dip each túró log into the chocolate, using a fork to coat evenly. Let excess drip off.
-
Set on parchment paper and chill in the fridge for 15–20 minutes until the chocolate hardens.
3️⃣ Serve & Enjoy!
-
Slice into bite-sized pieces or enjoy whole.
-
Store in the fridge for up to 3 days.
Tips & Notes
🧀 No túró? Substitute with:
-
Farmer’s cheese (pressed dry)
-
Ricotta (strained overnight in a cheesecloth)
-
Cream cheese (mixed with a bit of yogurt for tang)
🍫 For authenticity: Use Hungarian milk chocolate (like Milka or Stühmer).
🍋 Variations: Add cocoa powder to the filling for a “double chocolate” version.
A taste of Hungary’s beloved sweet-snack tradition! 🇭🇺🍫✨
