Vanilla Cream with No-Cook Chocolate

Ingredients:

Vanilla Cream:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 3 tbsp cornstarch

No-Cook Chocolate:

  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions:

Vanilla Cream:

  1. Prepare Vanilla Bean: If using a vanilla bean, split the bean lengthwise and scrape out the seeds.
  2. Combine Ingredients: In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla bean seeds (or vanilla extract).
  3. Heat Mixture: Heat over medium heat until the mixture begins to simmer, stirring occasionally. Do not let it boil.
  4. Thicken Mixture: In a small bowl, mix the cornstarch with a few tablespoons of cold milk until smooth. Gradually add the cornstarch mixture to the simmering cream mixture, stirring constantly.
  5. Cook Until Thickened: Continue to cook and stir until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool slightly.
  6. Chill: Pour the vanilla cream into serving glasses or bowls. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours, or until set.

No-Cook Chocolate:

  1. Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and heavy cream. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  2. Add Flavorings: Stir in the honey and vanilla extract until well combined.
  3. Cool Slightly: Let the chocolate mixture cool to room temperature, but not to the point of hardening.
  4. Top Vanilla Cream: Once the vanilla cream is set, spoon the no-cook chocolate mixture over the top of each serving.
  5. Chill Again: Refrigerate for an additional 15-20 minutes to allow the chocolate to firm up slightly.
  6. Serve: Garnish with fresh berries, mint leaves, or a sprinkle of sea salt if desired.
