White Chicken Skillet Lasagna

This White Chicken Skillet Lasagna is a creamy, comforting twist on the classic lasagna, made with a flavorful white sauce, tender chicken, and melty cheese. Perfect for a quick and easy dinner that packs all the richness of traditional lasagna in a skillet!


Ingredients:

  • 2 tbsp olive oil
  • 1 lb (450g) chicken breast, boneless and skinless, cubed
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 9 lasagna noodles, uncooked, broken into pieces
  • 1 cup baby spinach (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions:

1. Cook the chicken:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cubed chicken and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.

2. Sauté the onions and garlic:

  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook for 2-3 minutes, or until softened.
  • Add the minced garlic and cook for another 30 seconds, until fragrant.

3. Make the creamy sauce:

  • To the skillet, add the chicken broth and heavy cream. Stir to combine.
  • Season with dried basil, oregano, salt, and pepper. Let the mixture simmer for about 2-3 minutes to thicken slightly.

4. Add the noodles:

  • Add the uncooked lasagna noodles to the skillet, breaking them into pieces so they fit evenly in the sauce. Stir to coat the noodles with the sauce.
  • Bring the mixture to a simmer, cover the skillet, and cook for about 10-12 minutes, or until the noodles are tender and most of the liquid is absorbed.

5. Layer the cheeses:

  • Stir in the ricotta cheese, mozzarella cheese, and parmesan cheese until the cheese melts into the sauce, creating a creamy texture.
  • Add the cooked chicken back into the skillet and stir to combine.
  • If using, add baby spinach to the skillet and stir until wilted.

6. Simmer and serve:

  • Cover the skillet and let the lasagna simmer for an additional 3-5 minutes until everything is heated through and the cheese is melted.
  • Taste and adjust seasoning with more salt or pepper, if needed.

7. Garnish and serve:

  • Garnish with fresh parsley or basil for a pop of color and fresh flavor.
  • Serve the White Chicken Skillet Lasagna directly from the skillet, making it a simple and delicious one-pan meal!

Tips for Success:

  • Noodle texture: If the noodles are still too firm, add a bit more chicken broth or cream and cook for a few extra minutes until they’re tender.
  • For a lighter version: You can substitute the heavy cream with half-and-half or even milk to reduce the fat content.
  • Vegetable add-ins: Feel free to add extra veggies like mushrooms, zucchini, or artichokes for added texture and flavor.
