Zesty Lemon Pecorino Crispy Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (pounded to even thickness)

  • ½ cup grated Pecorino Romano cheese

  • ⅓ cup panko breadcrumbs

  • 1 tbsp lemon zest (from about 1 large lemon)

  • 2 tbsp fresh lemon juice

  • ½ tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • 2 tbsp olive oil (for cooking)

  • Fresh parsley or basil (optional, for garnish)

Instructions:

  1. Prep the chicken:

    • Pound chicken breasts to an even thickness (~½ inch) for even cooking. Pat dry with paper towels.

    • Season lightly with salt and pepper.

  2. Make the coating:

    • In a shallow bowl, mix Pecorino Romano, panko, lemon zest, garlic powder, oregano, and black pepper.

  3. Dredge the chicken:

    • Brush both sides of each chicken breast with lemon juice.

    • Press each piece firmly into the cheese-breadcrumb mixture, coating evenly.

  4. Cook the chicken:

    • Heat olive oil in a large skillet over medium heat.

    • Add chicken and cook for 4–5 minutes per side, until golden brown and crispy, and the internal temperature reaches 165°F (74°C).

  5. Serve:

    • Garnish with extra lemon zest, fresh herbs, and a squeeze of lemon juice if desired.

  • For extra richness, drizzle with a little extra virgin olive oil before serving.
