Ingredients

Cake:

  • 1 box yellow cake mix (or pineapple cake mix)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup pineapple juice (from a can of crushed pineapple)

Topping:

  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • Optional: Toasted coconut or chopped nuts for garnish

Instructions

1. Preheat Oven and Prepare Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking dish.

2. Prepare the Cake Batter:

  • In a large bowl, combine the cake mix, eggs, vegetable oil, and pineapple juice. Beat with an electric mixer on medium speed for 2 minutes, or until smooth.
  • Pour the batter into the prepared baking dish and smooth it out.

3. Bake the Cake:

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the cake cool completely in the pan.

4. Prepare the Topping:

  • In a medium bowl, whisk together the instant pudding mix and cold milk until thickened (about 2 minutes).
  • Fold in the whipped topping until smooth.
  • Stir in the crushed pineapple, ensuring it’s evenly distributed.

5. Assemble the Cake:

  • Once the cake has cooled, spread the pineapple topping evenly over the cake.
  • Cover and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld.

6. Garnish and Serve:

  • Before serving, garnish with toasted coconut or chopped nuts, if desired.
