Raspberry Zinger Poke Cake

Ingredients:

For the Cake:

  • 1 box white cake mix (plus the ingredients listed on the box)
  • 1 package (3 oz) raspberry gelatin (Jell-O)
  • 1 cup boiling water
  • ½ cup cold water

For the Topping:

  • 1 (8 oz) tub of whipped topping (Cool Whip)
  • ½ cup sweetened shredded coconut (optional, for a “Zinger” touch)
  • ½ cup mini chocolate chips (optional, for garnish)
  • Fresh raspberries (optional, for garnish)

Instructions:

  1. Prepare the Cake:

    • Preheat your oven according to the instructions on the white cake mix box.
    • Prepare the cake mix by following the instructions on the box. Typically, this involves adding eggs, oil, and water to the cake mix and mixing until smooth.
    • Pour the batter into a greased 9×13-inch baking dish and bake according to the cake mix package directions. Once baked, allow the cake to cool in the pan for about 10-15 minutes.
  2. Make the Raspberry Gelatin:

    • In a separate bowl, dissolve the raspberry gelatin in 1 cup of boiling water. Stir until the gelatin is fully dissolved.
    • Add ½ cup of cold water to the gelatin mixture and mix to cool it down slightly.
  3. Poke the Cake:

    • After the cake has cooled for 10-15 minutes, use a fork to poke holes all over the surface of the cake. Be sure to poke deep enough to allow the gelatin to soak in.
    • Slowly pour the prepared raspberry gelatin over the cake, making sure to cover it evenly. The gelatin will seep into the holes, creating the “poke” effect.
  4. Chill the Cake:

    • Refrigerate the cake for at least 2-3 hours (or overnight) to allow the gelatin to set and the cake to cool completely.
  5. Add the Topping:

    • Once the cake is fully chilled, spread the whipped topping evenly over the cake to cover it.
    • If you like, sprinkle shredded coconut over the topping for extra texture and flavor (this is optional but adds a fun “Zinger” touch).
    • Garnish with mini chocolate chips and fresh raspberries, if desired.
  6. Serve:

    • Slice and serve the cake cold! Enjoy the delightful combination of the soft cake, tangy raspberry, and creamy topping.

This Raspberry Zinger Poke Cake is a fun and colorful dessert that’s perfect for spring, summer, or any occasion. It’s sure to be a hit with everyone who loves the sweet and tangy flavor of raspberry. Enjoy!
