Ingredients:
- 1 can (16.3 oz) refrigerated biscuit dough
- 1 cup fresh or frozen blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
- 1/4 cup powdered sugar (for dusting)
Instructions:
- Preparation:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Making the Filling:
- In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, and ground cinnamon. Stir gently to coat the blueberries evenly.
- Assembling the Bombs:
- Open the can of biscuit dough and separate the biscuits.
- Flatten each biscuit into a 4-inch circle using your hands or a rolling pin.
- Place about 1 tablespoon of the blueberry mixture in the center of each flattened biscuit.

- Place the sealed dough balls seam-side down on the prepared baking sheet.
- Brush the tops with melted butter.
- Bake in the preheated oven for 12-15 minutes, or until the bombs are golden brown.
- Finishing:
- Remove the baking sheet from the oven and let the blueberry pie bombs cool for a few minutes.
- Dust the tops with powdered sugar before serving.
